I love pasta. Every weekend I boil a pot of pasta and toss it with cheese and seasoning for Saturday brunch. It’s a quick way to appease the hunger pangs and a dish like Tangy Tomato Pasta is ideal for a special weekend.
Ingredients:
250 g pasta or macaroni
2 tomatoes – chopped
4 tbsp tomato ketchup
3-4 flakes of garlic - chopped
6-8 tbsp grated cheese
Italian seasoning, such as Basil, Oregano and mixed seasoning
A pinch of pepper
A pinch of red chilli powder
Salt to taste
1 tsp oil
2 tsp butter
Method:

- Heat butter in a non-stick pan and sauté the garlic.
- Add the tomatoes and sauté till they turn glossy.
- Add salt and red chilli powder and stir gently.
- Sprinkle some seasoning – Basil, oregano and mixed-herbs and cook for a minute.
- Now tip in the pasta and cook for a few minutes with the lid covered.
- Pour in the tomato sauce and mix well. Cook for a minute or two.
