Tomato pasta  (Credit: pgoyette)

I love pasta. Every weekend I boil a pot of pasta and toss it with cheese and seasoning for Saturday brunch. It’s a quick way to appease the hunger pangs and a dish like Tangy Tomato Pasta is ideal for a special weekend.

Ingredients:

250 g pasta or macaroni
2 tomatoes – chopped
4 tbsp tomato ketchup
3-4 flakes of garlic - chopped
6-8 tbsp grated cheese
Italian seasoning, such as Basil, Oregano and mixed seasoning
A pinch of pepper
A pinch of red chilli powder
Salt to taste
1 tsp oil
2 tsp butter

Method:

  • Boil pasta in a saucepan full of water with a spoonful of salt and 1 tsp oil. Drain the water and keep aside.
  • Heat butter in a non-stick pan and sauté the garlic.
  • Add the tomatoes and sauté till they turn glossy.
  • Add salt and red chilli powder and stir gently.
  • Sprinkle some seasoning – Basil, oregano and mixed-herbs and cook for a minute.
  • Now tip in the pasta and cook for a few minutes with the lid covered.
  • Pour in the tomato sauce and mix well. Cook for a minute or two.
  • Add pepper and grated cheese and Tangy Tomato Pasta is ready to be served.
