Chicken cooked in minimal oil (Credit: Avlxyz) Thanks to CookingGoddess.com, I have started enjoying the process of cooking chicken. Earlier I only liked eating chicken – someone else would have to do the honours of chopping it up, marinating it and then cook it into a curry. But now with so many delicious recipes on the site, I’ve decided to take the chicken by the leg and dunk it in gravy; roast it; and even cook it without any oil (well, almost).
Here is the recipe that I’m trying out for lunch today. It’s simple and low on calories.
Ingredients:
1 tsp ginger-garlic paste
1- 2 green chilies - crushed
2 tbsp curd
1 tsp garam masala
Salt to taste
4 chicken thighs
1 tsp oil
Method:
- Mix together the ginger-garlic paste, curd, salt and garam masala for the marinade.
- Marinate the chicken pieces in this mixture for 5-6 hours or overnight.
- Take a non-stick pan and spread a tsp of oil with brush.
- Now place the pieces of chicken in a single layer in the pan and pour any excess marinade over it.
- Cover and cook for 15 minutes over medium heat and then simmer uncovered till dry. Don’t let the pieces brown.
Serve hot with bread or paratha.
