Served as a starter, Labhi Kebab is sure to get you into the mood of stuffing yourself with ‘lip-smackingly’ delicious Kashmiri cuisine. So, let’s get started with this tasty Shikara-shaped starter.

Ingredients:

500 g minced mutton
10 g mutton fat
1 tsp turmeric powder
1 tsp chilli powder
5 g Royal cumin seeds
500 g yoghurt
500 ml water
3 big green cardamoms
3 pieces of cinnamon
1 tsp dry ginger powder
1 tsp dry mint powder
100 g onion – finely chopped and fried till golden brown
Salt to taste
Sprigs of fresh mint leaves – finely chopped
Sprigs of fresh coriander leaves – finely chopped

Method:

  • Mix the minced mutton with the mutton fat, ½ tsp turmeric, ½ tsp chilli powder, Royal cumin seeds and a pinch of salt.
  • Make 16 small boat-shaped dumplings and set aside.
  • In a pan, heat yoghurt and water.
  • Add the green cardamoms, cinnamon, ½ tsp turmeric, ½ tsp chilli powder, dry ginger, min powder, fried onions and salt to taste. Keep stirring to prevent the yoghurt from curdling.
  • When the mixture comes to a boil, add the boat-shaped dumplings.
  • Cover the pan and cook on low heat for about 25 minutes.
  • Garnish with fresh mint and coriander leaves and serve hot.
