Golden squiggly jalebi (Credit: shooz) Pass by a sweet shop early in the morning and you’ll see a chubby halwai squatting next to a huge wok sizzling with oil or ghee. He draws curly patterns on the oil with a cone filled with batter and slowly these patterns turn into curly-wurly jalebis. A batch of hot golden, crisp and sweet jalebis are a perfect treat for any day. If you want to try making jalebis at home, here is a recipe that you can try.
Ingredients:
300 g flour
A few tsp of curd
500 g sugar
A few drops of food colour
1 tsp soda bicarbonate
Groundnut oil for frying
Method:
- Mix flour, cooking soda and curd. Add some water and make a smooth batter. Leave it to ferment overnight.
- The consistency of the batter should be thin enough to be poured.
- Make a sugar syrup with equal quantity of sugar and water.
- Heat oil in a wok. Pour the batter into a cone or an easy-squeeze sauce bottle and make squiggles and swirls in medium oil. When one side is done, fry the other side to a golden brown. Remove these crisp swirls and soak in the sugar syrup for 8-10 minutes before serving.
